Something I hadn't tried before: fresh mint & veggies... Simple & good 🫑🥒🌱

* Step 1
Fry all veggies and sauce ingredients on a pan for 15 minutes. Save fresh herbs to be added at the very end.
* Step 2
I served the veggies with vermicelli noodles and a couple of leftover shrimp. Fresh cilantro & mint added right before eating :)
