Smoked Salmon & Egg on Sourdough

Another Spring breakfast to celebrate the easing of restrictions and the lovely, lighter mornings. We drank our usual tea with it but it does offer the possibility of a Champagne 🥂 Brunch.

Ingredient

Food ration :

2 servings

Cooking time :

10 minutes including prep

Cooking instructions

* Step 1

Poach the eggs. I allow 4 minutes in a rolling simmer.

* Step 2

Meanwhile, toast and butter the bread and generously cover each slice with smoked salmon.

* Step 3

Add a poached egg to each slice and top with an anchovy fillet.
