Chicken, potato & crispy ham supper
A very easy one-tray chicken bake. I’d ordered in chicken legs for this Saturday’s garden picnic so used a mixture of spare thighs and drumsticks (with skin and bone) but either type is fine. Parma ham or bacon also work well instead of the cooked ham. #mycookbook

Cooking instructions
* Step 1
Pre-heat oven time Gas mark 6 or electric equivalent (probably 180-200C, 170C Circotherm)
* Step 2
Place the chicken pieces skin up in a roasting tin, put a little oil on the skin of each piece and fill the gaps in between with the chili, potatoes and beans. Finally, spread the ham pieces over the top.
* Step 3
Mix together the stock, mustard, crème fraîche and garlic. Pour over the chicken and vegetables and add seasoning. Finally, gently spoon the honey over all.
* Step 4
Cook in pre-heated oven for 45 minutes or until the chicken and potatoes are cooked. Sprinkle the coriander over all and serve onto hot plates.
