Frozen Mocha Latte Parfait

Cooking instructions

* Step 1

Coffee Granita: In a pitcher/bowl, combine coffee and sugar, stir until sugar dissolves. Pour mixture into a 13x9 inch glass baking dish, place in freezer. After 1 hour, when mixture starts to get icy at the edges, use a spoon to stir and break up the ice crystals. Put I back in the freezer. Freeze 2-2 1/2 hours long, stirring occasionally until mixture forms fine, firm icy flakes.

* Step 2

Sweetened Whipped Cream: Combine heavy cream, sugar, and vanilla in a chilled medium mixing bowl. Beat on medium-high speed until soft peaks form.

* Step 3

Parfait: Fill a pastry bag with sweetened cream and refrigerate until ready to use. Pour 1-2 tbsp of chocolate syrup into bottom of six tall 16 oz glasses. Place a scoop of coffee ice cream into each glass. Top with a scoop of coffee granita. Pipe a large rosette of whipped cream on top of granita and drizzle with chocolate syrup. Garnish parfait with chocolate shavings and dust with cocoa powder. Serve immediately.
