Chicken schnitzel

Chicken schnitzel

This zesty breaded chicken can be ready in no time! Serve with a green salad and potato wedges or boiled baby potatoes. A schnitzel is meat, thinned with a meat tenderizer, coated with flour, beaten eggs and bread crumbs, and then fried.

Cooking instructions

* Step 1

Place 2 large skinless chicken breast fillets in a large zipped-top bag.

* Step 2

Flatten the chicken breast fillets in order to reduce the cooking time. Pound until doubled in area and about 1cm thick.

* Step 3

Combine and mix 1 lemon zest, salt and black pepper to taste in breadcrumb bowl.

* Step 4

Pour 1 tbsp plain flour, 1 beaten egg and 125g breadcrumbs onto 3 separated plates.

* Step 5

Heat 1 tbsp olive oil over a medium-high heat and fry the schnitzels for 5 mins on each side until cooked through and golden.

* Step 6

Then add 1 lemon juice and 4-6 chopped fresh sage leaves. Fry for a few more secs and serve!
