Black Fruitcake, The one with no wheat flour

Let's just start out by saying Fruitcake has been the cake made fun of by so many. Like canned spam, hotdogs, bread in a can, potted meat and so on. In the past it was a way of preservation of food. At war spam, saved many of lives from starvation. When the Roman armies were mopping up the world to assimilate all the world into the Roman ways of life, they invented many things. One being the first energy bar or fruitcake. This began the history, the jokes, and the facts. Unlike what Johnny Carson said that there was actually one fruitcake made and it's being past all over the world, there are many different types. It has became a stereotype food. Well I hope, if you try one that if it's your first time or more that it taste good. Either way I hope you try one with an open mind.

Ingredient

1-1/2 teaspoon

salt

2 teaspoon

baking soda

1/2 teaspoon

ground cloves

1/2 teaspoon

nutmeg

1/2 teaspoon

mace

1/2 teaspoon

allspice

2 teaspoon

ground cinnamon

6 cups

pecan flour

3/4 pound

melted butter

1 cup

molasses

1-1/2 cups

buttermilk

1 pound

almonds

1 pound

Brazil nuts

1 pound

pecans

1 pound

walnuts

1/2 pounds

peanuts

1 pound

cashew nuts

10 ounces

currant jelly

8 ounces

candied citron

Cooking instructions

* Step 1

Preheat oven to 375° Fahrenheit. Line whatever you using with parchment paper or wax/ butter paper. Paper sticks to the pan if you spray or grease the pan first. Ok let's begin. Add the pecan flour to a big mixing vessel. I started with a big pot then had to pour into a huge roaster. Add baking soda, salt. and spices to pecan flour and mix.

Except the brandy, add in all the ingredients, eggs, and melted butter. It got to big for the pot and here is where it went into the roaster to be mixed.

Finally mixed. I used a spring formed pan, bundt cake pan and a flat baking pan for making flats for munching. Bake 45 minutes on 375° Fahrenheit. After that bake the rest of the way on lower heat at 325° Fahrenheit till done. To tell if it's done stick a bamboo skerer or a knife if it comes out clean it's done.

Let cool in pan till pan is cool to touch. Remove from pan and remove parchment paper allow to cool. If using Brandy pour it on and wrap in butter/wax paper put into an air tight container or ziplock bags. Check from time to time adding brandy as it dries over the next 2 months if it last that long it may be consumed by then. Store in refrigerator. You can also freeze it.

I added Brandy to the spring form it took 1-1/2 cup right away. I hade to split it in two and put into ziplock bags. Normally you wrap in cloth and keep cloth wet with brandy for a month. Then it should be preserved add brandy from time to time for the next 100 years. I think in Michigan they have them dated from 1800's. Merry Christmas from my heart to all I hope you enjoy!!!
