California Farm Quick Summer and Winter Potato Salads
Ten minute cold salad from raw potato to plate, made with fresh ingredients that dont spoil.
The outdoor summer version is a light one you can take camping, or to the beach or on a picnic while it stays fresh.
The winter salad version of this salad stays fresh and is more filling, using homemade mayonnaise or homemade greek yoghurt.

Cooking instructions
* Step 1
Preheat dry cast iron skillet while scrubbing and dicing potatoes, put cup of hot water with Tsp sea salt in skillet, add potatoes, submerge potatoes with more hot water, high heat. Boil till soft, ten minutes or less.
* Step 2
For summer salad, Dice onion, mix with fennel dressing and herbs and spices, or instant vinegar and oil and herbs and spices. Mix with done potatoes, taste, add freshly ground green peppercorns, serve.
* Step 3
For winter salad, dice onion, mix with mayonnaise or greek yoghurt, herbs and spices. Mix with done potatoes, add optional hard boiled eggs, taste, add freshly ground green peppercorns, serve.
