California Farm Fresh Sauerkraut Mash
The smell of fresh sauerkraut in the kitchen makes this simple and inexpensive meal feel special. The veggies stay crunchy in the mash. This recipe takes an extra 20 minutes to make the fresh sauerkraut from scratch, but still a quick meal, under one hour. Served with sweet and sour gravy made from cooking juices.

20 minute sauerkraut, 20 minute mash
Cooking instructions
* Step 1
Bring shredded cabbage and pork to boil in half cup apple cider vinegar and half cup water with all the spices, steam fifteen minutes on medium heat. Fry boiler onions in Tbs sugar, mix with saurerkraut. Remove pork, taste sauerkraut mix, adjust to your taste.
* Step 2
Dice pork and scrubbed potato, put on top of sauerkraut with cup of wine, top with water, bring to boil, then steam fifteen minutes on medium heat. Test doneness of potato with fork. When soft and ready, Drain off liquids, set aside. Let dry a few minutes while making gravy.
* Step 3
Make gravy. In heated cast iron skillet, brown Tbs unsalted butter, stir in Tbs flour, stir in drained juices, bring to boil, thicken.
* Step 4
Mash potatoes, pork and sauerkraut, serve with gravy on the side. Enjoy.
