Cooking instructions

* Step 1

Soak the rice and dals separately for at least 2 hours. Make sure you soak them separately, else while grinding, the rice will grind fast and dals will remain whole.

* Step 2

First grind the rice to a coarse paste. Mix both together. Now grind the dals with coriander leaves, curry leaves, dry red chillies, asafoetida, black pepper, salt.

* Step 3

Heat a tawa on medium heat. Once the tawa is hot, spread half a cup of batter on it. Do not spread it very thin like a dosa. Neither should it be very thick else it will not be crispy.

* Step 4

Make holes in between the Adai and add oil all around and the holes. Adai needs more oil than a normal dosa as it has more dals. After 2 minutes, flip the Adai and add some more oil. Keep flame from medium to low all through.

* Step 5

Once it is cooked golden from both sides take it to a serving plate. Serve hot, crispy Adai with butter, pickles, curd, jaggery or just as it is. It tastes awesome anyways πŸ˜‹
