Mexican stuffed peppers

Cooking instructions

* Step 1

Preheat oven to 350

* Step 2

Cut tops off peppers, remove seeds, boil peppers in water until tender

* Step 3

Line peppers in baking dish

* Step 4

Mix cooked ground beef, beans, cooked rice and cheese, fill peppers

* Step 5

Bake for 20-30 minutes, top with more shredded cheese, bake another minute. Serve immediately.

* Step 6

Add red enchilada sauce, if you need a sauce to make this similar to regular stuffed peppers.
