Pumpkin belly fritters

Pumpkin, both soft white one and yellow fibrous one, is extensively used in our cooking. We always throw the leftover soft fibrous and sticky innards/belly that we scoop out from the pumpkins. However this leftover pulp has been used to create a delicious and finger licking fritter, crisp from outside and soft from inside. A must try recipe to get your pumpkin juices flowing and use the leftover pumpkin belly.
Cooking instructions
* Step 1
Scoop out the leftover gooey, orange guts from the pumpkin(both white or orange).Remove the hard seeds. If the fibres are too long then chop them a bit.
* Step 2
Mix all the ingredients except oil in a bowl.
* Step 3
Heat oil in a flat bottomed pan for frying.
* Step 4
Now wet your hands and take small balls of the mixture. Flatten it on your palm and transfer it to the oil carefully.
* Step 5
Fry the fritters at medium-low heat till golden brown from both sides. Drain on a kitchen towel.
* Step 6
Serve the fritters hot, garnished with grated cheese(optional) with sauce of your choice.
