Pineapple Pachhadi

#indiankitchen Pachhadi is a traditional South Indian chutney or fresh pickle served as a side dish. It's usually made with ripe fruits or some vegetables, tempered with spices or even curd. A colourful side dish full of flavours is enjoyed with rice, dosa, adai or chapati. This is a kerala Pineapple Pachhadi.

Cooking instructions

* Step 1

Grind coconut, curd, green chillies and cumin into a paste in a blender.

* Step 2

In a pan or wok/ karahi, add pineapple, water, red chilli powder, turmeric powder, salt and sugar(depending on sweetness of pineapple). Cook slightly till pineapple is slightly soft.

* Step 3

To the above mixture add the ground paste from step 1. Cook for 2-3 minutes.

* Step 4

Heat coconut or sesame oil in a pan. Add mustard seeds. When it crackles,add urad dal, broken dry red chillies and curry leaves.

* Step 5

Add the above tempering to the mixture in step 3 and cook for 1 minute.Switch off gas and leave the pachhadi for few hours. Serve with dosa or rice.

* Step 6

Tip- 1- Cook on medium heat with stirring to avoid seperation of curd. 2- Also serve the pachhadi after some time from preparation as it tastes better with enhanced flavors. 3- Can replace pineapple with Ripe mangoes or bananas.
