Bitter gourd baingan bharta

Cooking instructions
* Step 1
Thoroughly wash bitter gourd and cut into two. Add this to pressure cooker along with water add salt. Cook for 2-3 whistles. Wait till steam releases, drain excess water and smash them, set aside.
* Step 2
Take kadai and add oil. When oil starts smoking, drop in pancha phutana along with onions. Fry till onions turn transparent. Add crushed garlic.Now add mashed bitter gourd and cook for 6-7 minutes or till it starts to brown. at last transfer the roasted baingan and potato (properly removing it's skin and mashed)
* Step 3
Again mix them all, till the bharta combine well. Sprinkle some chopped coriander leaves and serve hot with rotis or parathas.
