Egyptian cookie recipe, always made for Eid.
Ingredient

30 cookies

Cooking instructions
* Step 1
Mix all the dry ingredients together (I use my kitchen machine but you can use a electric handier, or do it by hand as well)
* Step 2
Add ghee (or butter) on low speed, till everything dry is coated and rise to medium speed.
* Step 3
Add the milk and mix ob medium speed. Do not overmix it. The dough reminds me little of kinetic sand. Take a little bit and roll the dough between your hands. The dough should not crack. If it cracks knead the dough for some more seconds. Let the dough rest for about an hour. (I will add soon a picture of how the dough should look like)
* Step 4
Take a spoon and portionize the dough in same size pieces. Roll the to balls, make a hollow with your thumb and fill it with date paste, pistachios or other nuts or fillings.
* Step 5
You can design with a fork, if you want to. Or stamp them with a form if you have.
* Step 6
Preheat the oven to 160 ° Celsius. Bake the cookies for 20-25 minutes, till they are still light from above but got some colors on the ground.
* Step 7
Let them rest for 5 minutes and than put them in a jar or bowl. Let them cool down completely.
* Step 8
When they are completely cool, coat them with powdered sugar. (Don't do it when they are still hot, because the sugar would meld and this wouldn't look great.
