Lamb shank with rosemary
Lamb shank with rosemary and garlic, stewed in red wine, is an excellent holiday dish. The meat is aromatic and tender with a ready-made sauce that can be poured over it.

Cooking instructions
* Step 1
Prepare the garlic. Remove the leaves from the rosemary sprigs. Chop them with a knife.
* Step 2
Add garlic, rosemary, pepper mixture and salt to soft butter. Mix well.
* Step 3
Prepare the lamb shank. Wash, dry with paper towels, trim off excess fat.
Using a sharp knife, make cuts inward across the entire surface of the drumstick.
* Step 4
Coat the leg thoroughly on all sides with rosemary oil. Try to get the oil into all the cuts. Place in a deep baking dish.
* Step 5
Pour in red wine. Add 100 ml of water and rosemary sprigs from which the leaves have been removed. Or add fresh twigs. Cover with foil or a lid and bake in an oven preheated to 200 degrees for about 40 minutes.
* Step 6
After 40 minutes, remove the foil or lid. Bake the lamb shank for another hour. Periodically water with the released juice.
* Step 7
The meat is ready when it can be easily pierced with a knife and the juice that comes out is clear.
