Butternut Squash spinach Tagliatelle
A vegetarian pasta dish that is easy to prepare and not only super healthy but simply delicious. #GoldenApron23

Cooking instructions
* Step 1
On a baking sheet arrange the cubed butternut squash, sprinkle with sal, pepper and cumin and drizzle with olive oil. Bake in a pre-heated oven 220c for 15-20 minutes.
* Step 2
Cook pasta according to package instructions, drain and drizzle with olive oil. Set aside.
* Step 3
In a large frying pan heat 2 tbsp of olive oil, add the onion and garlic, saute until translucent.
* Step 4
Add the vegetable stock, grated parmesan cheese and chopped chilly peppers. Simmer over low heat for a few minutes to combine all the flavours. Add the pasta and finally the baked butternut squash, chopped parsley and spinach. Cook for a few more minutes until spinach begins to wilt. Serve with more grated parmesan cheese and enjoy.
