Potato Paprikas

Potato Paprikas

My Daughter-in-law's favorite Hungarian recipe. She asks us to cook it for her each time we visit.

Cooking instructions

* Step 1

Peel potatoes and cut into cubes, rinse under cold water. Chop onion and fry in oil until golden. Remove from heat and add paprika powder, garlic, sausage, tin of tomato, and stir for 2 minutes under medium heat.

Add potatoes, salt and 450 mls (1 pint) of water, cover and cook on low heat for about an hour or until potato is soft. Season to taste and serve with freshly baked bread and Cucumber salad.

I did not peel the cucumbers but most people do (the choice is yours). Using a mandolin slicer, slice both cucumbers as thinly as possible into a bowl.

* Step 5

Add the salt and mix the cucumbers slices evenly to coat them. Let sit for 30 minutes to draw out the water from the cucumbers. In a separate bowl combine, sugar, water vinegar and garlic stir until sugar dissolves. Take large handfuls of cucumbers and squeeze out as much liquid as you can and place the balls of squeezed cucumbers in the salad dressing. Sprinkle with paprika powder, Enjoy.
