BBQ baba ganoush
I’m starting to appreciate my gas bbq more and more for cooking vegetables. It’s gives a distinctly smokey taste that you don’t get using your oven. This recipe is super easy. I took my inspiration from a recipe by @sonia but adapted some of the quantities according to what I had.

* Step 1
Turn on your bbq and set the temperate to low (if using an oven, maybe 160 degrees c). Pierce your aubergines with a sharp knife and roast on the bbq for 40 minutes. Check and turn the aubergines half way through.
* Step 2
Once cooked and soft, remove from the heat. Cut down the middle and scrape the flesh into a bowl. Set aside for 10 minutes to cool. You’ll need to drain any excess liquid from the bowl.
* Step 3
Finely grate the garlic and add to the bowl with the aubergine, along with the lemon juice, tahini, paprika, oil and pinch of salt. Then pulse 5/6 times with a stick blender. Be careful not to over blitz, otherwise you’ll lose the texture.
* Step 4
Transfer to a serving bowl, season to taste and sprinkle with a little cayenne pepper to serve.
