California Farm Smoked Duck Wild Rice Soup
After having been carved, the carcass of a smoked duck makes a delicious broth for a quick smoked duck soup wild rice dinner, gamey and lean, perfect with wild rice. Here is the recipe.

Cooking instructions
* Step 1
Fry chopped bacon, onion slices, button mushrooms, elephant garlic clove in cast iron skillet till brown, about fifteen minutes.
* Step 2
Place carcass of smoked duck in dutch oven, count the bones, should be 10 to 12, cover with water. Simmer 15 minutes. Add chopped bacon, carmelized onions, and garlic.
* Step 3
Add cooked wild rice with nest of mung bean noodles, chopped green onions, chopped italian parsley to soup. Simmer till noodles are soft, few minutes. Stir, remove duck carcass bones, count, should be 10 to 12, put in garden fermenter, serve.
