Spicy Couscous

Cooking instructions

* Step 1

Chop spring onions and pepper.

* Step 2

Put oil, spices, garlic puree and ½ spring onions into saucepan and cook 2 mins.

* Step 3

Put rest of onions into basin and add yogurt.

* Step 4

Add sweetcorn, pineapple, apricots, sultanas and tomatoes to saucepan and cook boil for 10 mins.

* Step 5

Measure couscous into mixing bowl and cover with 180ml boiling water. Cover bowl with plate and leave for 10-15 mins.

* Step 6

To serve – fluff couscous with fork and put onto plate. Put vegetable mixture on top and drizzle with yogurt topping.
