Watercress Cashew Pesto Noodles Stir-fried
This is another quick and easy vegetarian dish. It is super luscious and incredibly good for you.I made this dish in 15 minutes! #eattherainbow
Cooking instructions
* Step 1
Separate the egg yolk from the egg white. Set aside.
* Step 2
Prepare the egg noodles according to an instruction on the package.
* Step 3
Blend the watercress, basil, cashew nuts, olive oil, garlic, lemon juice, salt and pepper to your preferred consistency.
* Step 4
Add a little olive oil into the frying pan, follows by the cooked egg noodles then the watercress cashew pesto.
* Step 5
Put parmesan cheese, soya sauce, season with salt and black pepper. Stir all the ingredients well.
* Step 6
Put the egg yolk in the middle while the noodles are hot. Scatter the red chilli and serve immediately.
