One Pot Pasta with Meatballs

A warming dish that provides 2 portions of over5aday with just 310 calories per serving. A side salad adds around 35 calories and provides another 1 of over5aday. Counts as an Over5days recipe on the Pro52diet.

Cooking instructions

* Step 1

Combine the ground beef with the thyme and mix thoroughly. Divide the mix into a half and then quarters. Use each quarter to roll out five compact meatballs. Return the meatballs to the chiller for at least half an hour.

* Step 2

Place a large lidded pan sprayed with Spray2Cook on a medium to high heat. Whilst the pan is heating up place the meatballs on a clean work surface and spray the meatballs and intermediate work surface with Spray2Cook. Roll the meatballs carefully to cover with Spray2Cook. When the pan is hot add the meatballs and fry for 5 minutes turning frequently. Throughout remember homemade meatballs are delicate and need to be handled carefully.

* Step 3

Whilst the meatballs are cooking microwave the onion and celery for 4 minutes.

* Step 4

Add the microwaved vegetables to the meatballs together with the garlic. Spray with Spray2Cook if needed to stop sticking. Cook for 2 minutes before adding the tomatoes, rosemary and tomato purée. Lid the pan often through the cooking and stir at all stages occasionally.

* Step 5

Add 750ml / 25 fl. oz. of boiling water. Add the stock cube. Stir in the pasta. Turn to a vigorous simmer and cook for 10-12 minutes until the pasta is almost to your liking. Blend the cornstarch with a little water (adding slowly) and then add the blended cornstarch to the pan. Allow it to re-boil before serving with the cheese scattered over.

* Step 6

A side salad with a diet vinaigrette completes the meal.  See below for the preparation of the vinaigrette.
