Chicken Curry and Rice

The curry sauce recipe in this blog is in danger of offending pukka curry chefs. However it is a Six2go recipe so with just six ingredients and fifteen minutes you can have a satisfying DIET meal on the table. It punches 3½ over5aday per serving whilst costing only 370 calories. Cooking instructions

* Step 1

Put a saucepan of pre-boiled water on high heat. Put the rice in the boiling water for 10 minutes.

* Step 2

Microwave the onion for 1 minute.

* Step 3

Chop the chicken into pieces and cook in a deep fry pan (or wok) put on high heat after spraying with Spray2Cook.

* Step 4

Stir and cook the chicken for 1 minute then add the onion – spray with more Spray2Cook - stir and cook for 4 minutes.

* Step 5

Mix in the tomatoes, yoghurt and curry powder. Heat through and simmer until the rice is cooked, drained and served onto a warmed plate then add the chicken curry mix.
