Peppered Potato Cakes
Accompaniments can brighten a meal. Leftover mashed potato can be used to create these really tasty potato cakes that are great diet food. They deliver 1½ of over5aday in just 100 calories.

Cooking instructions
* Step 1
Microwave the peppers and onions for 2 minutes. Stir to mix then microwave for a further 2 minutes.
* Step 2
Put in a mixing bowl together with the potato and black pepper and mix everything well. Microwave for a further 2 minutes.
* Step 3
Divide the mixed vegetable between two chef’s rings and compress to form two deep discs.
* Step 4
Put a fry pan, sprayed with Spray2Cook (see below), on a medium to high heat.
* Step 5
Put the potato cakes in the pan and pat with fish slice to create “burger” size discs. After a short while spray the top of the cakes with Spray2Cook and turn.
* Step 6
Repeat spraying and turning until the cakes are nicely browned before serving as an accompaniment or the basis of a filling breakfast (say with a fried eggs, as shown above and described below or with Zucchini & Ham Scramble, below - see the Recipe in this blog).
