Mexican style chicken stew

sweetcorn

200 ml

water

Cooking instructions

* Step 1

Cook chicken

* Step 2

Whilst chicken cooking halve peel and thinly slice shallot

* Step 3

Peel and grate garlic drain and rinse beans half into a bowl and mash.add rest into bowl and stir combine. Drain and rinse sweetcorn

* Step 4

Once chicken cooked add shallot. Cook until softened. Stir in Mexican spice garlic and sweet corn.

* Step 5

Add in passata water chicken stock and blackbeans

* Step 6

Bring to boil - cover the pan with lid or some foil and simmer until thick and chicken is cooked.

* Step 7

Once cooked stir in spinach

* Step 8

Serve with bread or cibatta
