Tomato creamy risotto

Tomato creamy risotto

#vegetarian #lunch This recipe can be vegetarian if you use vegetable broth.

Cooking instructions

* Step 1

In a smaller pot, boil 1 l of chicken or vegetable broth and keep heating over medium heat.

* Step 2

Peel and chop onion and garlic. In a bigger pan, add olive oil and cook onion until golden brown. Add garlic and cook for 1 more minute. Add tomato puree and cook for another 2 minutes, stirring constantly.

Add whole cherry tomatoes to the pan and cook while stirring until the tomatoes crack. Add dry rice, salt and pepper, and add 1 ladle of broth. The rice will absorb the liquid, so keep adding broth by ladles and stir the whole time. The rice should cook after 12-15 minutes.

* Step 4

When you have used the whole broth, add butter and grated cheese and mix well. The risotto should have nice creamy consistency.
