Apple and Cinnamon Muffins

Its so easy, fast, yummy and smells good!

Cooking instructions

* Step 1

Preheat the oven to 180C. Line an 8 hole muffin pan with paper muffin cases.

Put the butter and sugar in a large bowl and, using a hand held electric whisk, beat together until light and fluffy.

Add the eggs to the mixture, one at a time, beating thoroughly after each addition.

Sift in the flour, baking powder, baking soda and cinnamon. Add the apple sauce and stir everything together until combined.

Divide the mixture equally between the muffins cases.

Bake in the oven for 25 minutes until a toothpick inserted into the center comes out clean. Leave to cool on a wire rack.

To make the frosting, sift the confectioners' (icing) sugar into a large bowl. Add milk and vanilla and mix until smooth. Spoon the frosting on top of the muffins, allowing it to drizzle down the sides.

* Step 8

Quarter, core and slice the apple and toss the slices in the lemon juice. Sprinkle the cinnamon over the muffins and top with the apple pieces.
