I love healthy eating. I like simple concepts with maximum input. The blueberries and arugula are very high in antioxidants. This salad is very simple and easy to make. Enjoy!

* Step 1
1. Slice red onion into thin strips, then set aside.
* Step 2
Slice english cucumber into thin strips, then set aside.
* Step 3
Seperate the arugula on two plates. Then put 1/2 cup of each veggie on each top. Then put a tablespoon of dressing on each plate.
