Not-so-sweet Carrot Bread
Just the right amount of sweetness (for me) and super moist. Egg free and can be made vegan if using soy milk. Makes one poundcake size loaf or 12 mini muffins.
Cooking instructions
* Step 1
Grate half of the carrot and cut the other half into very fine match sticks.
* Step 2
Mix all the ingredients in a big bowl.
* Step 3
Bake in oven at 170°C/325°F for 35-40 minutes for a pound cake loaf or 15-20 minutes for muffins.
