Traditional Hummus

A classic recipe for the famous hummus. A chickpeas puree with tahina paste, garlic & lemon juice.

Ingredient

Food ration :

Cooking time :

1 clove

garlic

1/2 cup

tahini

1 tablespoon

olive oil

Cooking instructions

* Step 1

Sink the chick peas overnight in water.

* Step 2

The next morning, cook for 30 minutes with salt in a pressure cooker.

* Step 3

Grind it finely in the mixer to get a puree.

* Step 4

Crush the garlic clove.

* Step 5

Mix all together chick peas, puree garlic, lemon juice, and tahine (sesame paste).

* Step 6

Serve as such (cold); and garnish with either paprika, cumin, turnips, a small thread of olive oil and/or fresh mint leaves to garnish.
