Mexican Quinoa

Ingredient

1 tbsp

oil

1 cup

quinoa

1 cup

corn

1/2 tsp

cumin

Cooking instructions

* Step 1

Saute garlic in oil over medium high heat for about a minute

* Step 2

Stir in quinoa, broth, bean, tomatoes, corn, cumin, salt and pepper.Bring to a boil then reduce the heat and simmer until quinoa is cooked through, about 20 minutes

* Step 3

Stir in avocado and lime juice
