#globalcookpadgames2024-#vegetable protein-( spinach ) a Mediterranean salad, made with fresh boiled chickpeas or used canned chickpeas both are tasty, delicious, so enjoy this salad at room temperature or chilled it. On behalf of my friends, they ask me to make something with canned food, so I kindly fulfilled there request. Course: salad, Cuisine: Mediterranean, Diet: vegetarian, nutrition value: spinach is rich in vitamin A,C,K, iron, folate, potassium and chickpeas are rich in vitamin A,C & E, fiber, protein.

Cooking instructions

* Step 1

For the sherry / apple cider vinaigrette(dressing), in a small bowl add sherry vinegar or apple cider vinegar 🍎, finely chopped garlic πŸ§„, season with salt πŸ§‚ and black pepper powder mix well, keep aside. Soaked chickpeas in warm water, add 1/4 tsp salt for 6-7 hours, then boil in advance to same time, keep aside.

* Step 2

Heat extra virgin olive oil/ sunflower oil and boiled chickpeas, saute for 2 mins, add chillies (smoked paprika powder, regular paprika powder, cayenne powder) cumin powder and mix well, again saute for 2 mins, remove out in a plate and let it cool completely, keep aside. Spicy chickpeas is ready,Wash and pat dry on kitchen towel (the spinach leaves), finely chop and keep aside, in a large plate or bowel πŸ₯£, add spiced chickpeas, finely chopped spinach mix gently.

* Step 3

Add red onion rings, tomato diced/ cherry tomatoes πŸ… cut into halves diced, chopped jalapeno, season with black pepper powder, salt πŸ§‚ and mix everything together until well mixed, transfer the salad into a serving dish and pour dressing or drizzle the vinaigrette over the salad, serve at room temperature or keep in the fridge and serve chilled.

Note: I have substitute sherry vinegar with apple cider vinegar but if you like to make with sherry vinegar go for it. I have given recipe for canned chickpeas as well you can try the both recipes although I always use fresh ingredients, for healthy meal, instead of canned food,but that depends as your desire which recipes you like more per taste and to save your time. Use same ingredients for making the dressing or vinaigrette just remove vinegars Garnish as show on the photo if desired. Enjoy
