Fried Zucchini
I was just about to cook ‘Pan Fried Zucchini’. Then I saw a bag of Polenta (Cornmeal), which I need to use up soon. I instantly thought about my ‘Fried Okra’ recipe. I cooked Zucchini in the same method. The grainy coating with Polenta and crunchy Zucchini are a good match. Next time I will double the recipe and cook more.
Cooking instructions
* Step 2
Wash Zucchini, cut about 1cm thick, and place in a bowl. Sprinkle Flour over to lightly coat, add whisked Egg, and combine.
* Step 3
In a shallow bowl, combine Flour, Polenta (Cornmeal), Salt, Onion Powder and Pepper (OR Chilli).
* Step 4
Coat Zucchini slices with Polenta mixture and fry, several pieces at a time, for 1 to 2 minutes. DO NOT over cook. Drain on paper towel.
