Pork Shogayaki (Ginger Pork)

‘Pork Shogayaki’, or Ginger Pork, is one of the most popular Izakaya dishes. It is easy to cook if you have thinly sliced Pork. I used to buy a block of Pork Belly and slice it by hand because thinly sliced any meat was not available where I live. More than 20 years later, it is widely available and this dish can be prepared so easily.

Ingredient

Food ration :

2 servings
1-2 teaspoons

Oil

2 tablespoons

Soy Sauce

2 tablespoons

Mirin

1/2-1 teaspoon

Sugar *optional

Cooking instructions

* Step 1

Combine grated Ginger, Mirin and Soy Sauce (and Sugar) in a small bowl.

* Step 2

Heat Oil in a frypan and cook thinly sliced Pork over high heat. It won’t take long.

* Step 3

When Pork is cooked and slightly browned, add the sauce and cook until sauce thickens, turning the pork over, and that’s it! *Note: I sprinkled with Shichimi (Japanese Chilli Spice Mix) for the above photo.
