'Koshi-an'

'Koshi-an'

'Koshi-an' is also made with 'Azuki' Red Beans, but the cooked beans are passed through a sieve to remove bean skins. You can make it very easily by using Powdered 'Azuki' Beans. But Powdered Azuki Beans is impossible for me to find in Australia. Making 'Koshi-an' from scratch is very demanding hard work. So here is the very easy method. Use a food processor.

Ingredient

Food ration :

About 400g
1 cup

Sugar

1 pinch

Salt

Cooking instructions

* Step 1

<Food Processor Method> Place Azuki Beans in a large saucepan or a pot and cover them with a plenty of water, and cook until the beans are swollen and plump. Darin the water.

* Step 2

Place the beans back into the saucepan and cover them with plenty of water again and cook until the beans are tender.

* Step 3

Do not drain all water this time. Save some water and put all beans and water into a food processor or blender and make them into paste. *Warning: It is very hot, you need extra care not to burn yourself.

* Step 4

Place the bean paste back into the saucepan, add Sugar and pinch of Salt. Cook stirring consistently until it gets the texture.

* Step 5

<If you are lucky to have Powdered Azuki Beans> Follow the instruction. Basically cook 150g Powdered Azuki, 400ml Water, 240g Sugar and a pinch of Salt in a saucepan until it gets the texture.
