Chickpea, cauliflower and pepperdew salad

I tried one of the Woolies meal kits and this one was a winner!

Ingredient

Food ration :

1 person

Cooking time :

15 minutes
1/4 cup

hummus

1 Tablespoon

red wine vinegar

Handful

basil

1/4

lemon

Cooking instructions

* Step 1

Mix 60g pepperdews into a quarter cup of hummus

* Step 2

Cook a cup of cauliflower and half a can of chickpeas in air fryer or oven until crispy

* Step 3

Add a handful of basil to a bowl and mix with a tablespoon of red wine vinegar and a cup of wild rocket and stir through to mix

* Step 4

Mix all ingredients together and top with half a circle of feta and juice from 1/4 lemon
