London Particular - Thick Pea Soup #Britishclassic

Last month, my cookbook club celebrated all things Delia in honour of her 80th birthday 🎉 It was so lovely to share stories about books, recipes and food; it has resulted in an obsession with Delia recipes ever since! I have also been surprised to find how relevant the recipes are to me, with so many frugal and many plantbased ingredients.

Ingredient

4 people
3-4 cups

veg stock

Cooking instructions

* Step 1

Soak the peas for 8 hours (or use the quick soak method by bringing to the boil and soaking for an hour and covering with a lid.

* Step 2

Wash, peel and chop the carrot, onion and leek and sauté on a low heat in a little vegan butter.

* Step 3

Mix the stock with 3 cups of water. Rinse the peas, add the stock and sauteed veggies. Cook on a slow simmer for 45 minutes or on until the peas are soft.

* Step 4

Blend and season with salt, pepper and a pinch of the smoked salt. Toss the croutons with smoked salt. Sprinkle with plenty of fresh chopped parsley and the homemade croutons to serve. Enjoy 🥣
