Strapatsada (kagianas)

Strapatsada or kagianas (scrambled eggs with tomato) is a very easy summer recipe with eggs, tomato and feta cheese.

Ingredient

eggs

500 g

tomatoes

75 g

butter

1 tbsp

heavy cream

2 cloves

garlic, grated

2 pinches

sugar

1 pinch

oregano

Cooking instructions

* Step 1

Place the peeled and finely chopped tomatoes in a frying pan with their juice, the salt, peppers, oregano, sugar, garlic and butter. Simmer until it absorbs all its liquids and thickens.

* Step 2

Beat the eggs and add them to the tomato together with the feta cheese and the heavy cream. Use a whisk to stir fast and vigorously so that they don't have enough time to solidify and get firm.

* Step 3

Serve them plain or over bread sprinkled with the parsley.
