Fytoura (pan-fried semolina cake) from Zakynthos

Traditional sweet from Zakynthos... Everyone who has visited Zakynthos has surely tasted it!

Ingredient

3 l

water

1 kg

semolina

1/4 cup

fine salt

Cooking instructions

* Step 1

Boil the water with the salt in a pot.

* Step 2

When it starts to boil slowly add the semolina while stirring with a wooden spoon. Stir until you get a mixture like a cream that is not too thick neither too thin.

* Step 3

Pour the mixture in a tray and let it rest for about 12 hours.

* Step 4

Score the sweet as you would score baklava.

* Step 5

Pour plenty of oil in a frying pan and fry each piece one by one.

* Step 6

As soon as they are golden brown remove from the frying pan and dust with plenty of sugar and cinnamon.
