Karydaki (fresh walnut) spoon sweet

A sweet that requires quite a bit of effort but is extremely delicious.

Cooking instructions

* Step 1

Wearing gloves, take the walnuts and cut off the edges. Then, using a (souvlaki) wooden skewer prick them on both sides.

* Step 2

Put them in a pot with plenty of water and boil for about 15 minutes.

* Step 3

When they are boiled, wash them with cold water and put them in a bowl with cold water leaving them for 2 days, changing the water about 4-5 times a day.

* Step 4

Put the ingredients for the syrup in a pot and stir constantly so that the sugar doesn't stick. When it starts to boil, leave for 10 minutes.

* Step 5

When the syrup is ready place the 10 cloves in a muslin cloth and add them togehter with the walnuts.

* Step 6

Boil for 10 minutes and let it cool.

* Step 7

Boil again on the next day, skim off the foam and let them cool once more. If they let out any foam during the night, skim it off.

* Step 8

The next day, boil the sweet once more until the syrup thickens, remove the muslin cloth and add the lemon and the vanillins. Stir lightly and remove from fire.

* Step 9

When it cools, store in jars.
