diced fresh strawberries
1 teaspoon
fresh lemon juice
2 teaspoons
baking powder
1/2 teaspoon
coarse salt
6 tablespoons
cold unsalted butter, cut into small pieces
2/3 cup
heavy cream
Cooking instructions
* Step 1
Preheat oven to 375 degrees F
* Step 2
Combine strawberries, lemon juice and 2 tablespoons of granulated sugar. Set aside.
* Step 3
Whisk together flour, baking powder, salt and remaining granulated sugar in a large bowl. Cut in the butter with a pastry cutter until mixture resembles coarse crumbs. Add in cream until dough starts to come together, then stir in strawberry mixture.
* Step 4
Using a small ice cream scoop, drop cookie dough onto baking sheet lined with parchment paper.
* Step 5
Bake for 20 to 25 minutes, or until golden brown. Cookies will harden as they cool. Transfer to a wire rack and let cool.
