Courgette and lime cakes

Courgette and lime cakes

The veggie patch is full of courgettes at the moment and I thought I would try something different. Basically a carrot cake recipe but I’ve substituted grated courgettes for grated carrot .

Ingredient

Cooking time :

15-20 minutes at 180 degrees
130ml

olive oil

1/2 teaspoon

bicarbonate of soda

1/2 teaspoon

baking powder

1 teaspoon

vanilla essence

Cooking instructions

* Step 1

Grate the courgettes and all place in a sieve over a bowl to drain.

* Step 2

Place the eggs, sugar and oil in a bowl and whisk until lighter and creamy.

* Step 3

Add the flour, baking powder, bicarbonate of soda, vanilla essence and mix well. Then stir in the grated courgettes and grated peel of 1 lime.

Divide equally between cup cake holders - I made 15

Bake at 180 degrees for 15-20 minutes until cooked (springy)

Cool

* Step 7

To make the icing mix the lime juice with icing sugar until you have preferred consistency.

Spoon over cup cakes. Decorate with grated lime peel or whatever you like as a topping
