Potato Waffles

Makes a great lunch or side dish

Cooking instructions

* Step 1

Bring a pan of water to the boil and add the potatoes Boil for 15 minutes or until the potatoes are tender Drain away the water and place the potatoes in a bowl Mash the potatoes and stir in the dairy free milk, dairy free spread, dairy free cheese and gluten free plain flour Season with salt and pepper

* Step 2

Stir until well combined and then divide into 8 balls Preheat the waffle iron Grease the waffle iron with some cooking spray Cook each ball of mashed potato until crisp, about 7 minutes
