After cooked live on IG with my friend Marilita as she connected to me from Greece. Perfect sum up for our Global Food Tour on Greece week ๐Ÿ‡ฌ๐Ÿ‡ท. We made Greek salad and Tzatziki and also she gave me some tips about cutting tomatoes on the mixing bowl so keep the juice in the bowl rather than chop it on the chopped board. This is an authentic recipe that she taught me. Itโ€™s so fresh and delicious and a must try.

Ingredient

Cooking instructions

* Step 1

Crush the garlic. Mix with the oil and a pinch of salt, and set aside.

Grate the cucumber coarsely with a hand grater. Place into a colander, salt lightly and leave to drain for 30 minutes.

Stir the garlic & olive oil, lemon juice and vinegar into the yoghurt. Squeeze the cucumber very well and add it in. Add the chopped mint and mix gently so that everything is well incorporated.

Taste and adjust quantities of salt & lemon juice accordingly. Ideally, allow the tzatziki to sit for a couple of hours in the refrigerator.

Just before serving, drizzle with extra olive oil and decorate with a few olives. Serve with greek style pita bread and greek salad ๐Ÿฅ—
