Apple Dapple Cake

Apple Dapple Cake

Please note, because of the fruit and cream, this cake is at its best the day it's made.

Cooking instructions

* Step 1

FOR THE CAKE, Heat the oven to 175°F Celsius. Sift flour, baking powder and bicarbonate of soda together

* Step 2

Beat the sugar and oil together in a large bowl.

* Step 3

Add eggs and vanilla. Mix well

* Step 4

Mix in the flour, baking powder and baking soda. Alternate with cream. Don't over mix. Fold in apple and nuts. Pour batter into prepared bunt pan and bake for an hour. Test with a cake tester or toothpick to ensure its done. ( skewer should come away clean ). Place on rack while you make the glaze.

* Step 5

THE GLAZE. In a pot on top of the stove, melt the butter. Add the sugar and cinnamon,stirring often. When sugar has melted add cream, stir well until the mixture has thickened slightly

* Step 6

Remove cake from pan onto some tin foil or plate. Gently stab some small holes into the cake so that glaze can seep in. Pour glaze over whilst cake is still warm.

* Step 7

Serve warm with ice cream, or cold with cream
