Chicken breast served with coriander rice, rocket salad and avocado coriander sauce
I created this recipe specifically for #onerecipeonetree campaign. My son called this ‘tree’ 🌳- coriander rice and rocket salad topped with avocado coriander sauce - ‘the birch tree’ as the trunk is white. The tree is on a patch of grass. 😁😍. Sauce is really lovely. (I adapted this sauce recipe from my Leiths course). I love it spicy so I garnished this with some red chillies. If you are not a big fan of hot and spicy, you don’t need to add them. #onerecipeonetree
Cooking instructions
* Step 1
Pre heat the oven to 200 degree C
* Step 2
Brown chicken on griddle pan or render chicken skin for 3-4 minutes or until you like the colour (on presentation side only). Then cook it in the oven for 8-12 minutes depending on how thick your piece of chicken is.
* Step 3
When chicken is in the oven, we add avocado, mayonnaise, lime zest and lime to blender or food processor and blend. Then add chopped coriander, chopped chilli, olive oil, salt, black pepper and sugar. Blend them again until it’s smooth. The sauce is done.
* Step 4
Chop coriander finely and gently stir in to our steamed rice. Then place our coriander rice on the plate. Top our tree with rocket salad and avocado coriander sauce. Place chicken on the plate. Garnish with chillies, if you like hot and spicy sauce. Now it’s ready to be served.
