Cooking instructions
* Step 1
In a large bowl of a stand mixer, mix together all the flour and salt.
* Step 2
Make a well in the flour mixture. Pour the oil into the well.
* Step 3
Use the dough hook and stir on low for about 10 minutes while slowly adding in the water. Add more water or flour as needed.
* Step 4
Take dough out of stand mixer and knead a few times by hand into a smooth ball.
* Step 5
Wrap dough bowl in plastic wrap or put inside a covered bowl. Chill for 30 minutes.
* Step 6
Take dough ball out of fridge. Divide into 4 pieces. Work on 1 piece at a time while covering the others to prevent dough from becoming too dry.
* Step 7
Roll small piece of dough flat and shape as desired either by hand or using a pasta maker.
* Step 8
Boil a pot of water with salt added. Cook fresh pasta for about 5 mins or until desired softness.
* Step 9
When done, take pasta out and strain. Add sauce, seasonings, herbs, and other ingredients as desired.
