Brighter Than Sunshine

Cooking instructions
* Step 1
Pre-heat oven at 180C (gas mark 4).
* Step 2
Prepare all your ingredients beforehand.
* Step 3
Slice and spread mushroom and capsicums into baking dish. Drizzle oil and toss in salt & pepper.
* Step 4
Bake for about ~10mins or until the vegetables are almost roasted through. (Lightly browned around the edges)
* Step 5
Take the dish out if the oven. Layer on the tomatoes, sprinkle all herbs on top and mix well.
* Step 6
Make 4 small wells in the sauce and crack in the eggs.
* Step 7
Put back into the oven and bake for another 10-15 mins or until the eggs begin to set (whichever is preferred).
* Step 8
Take out of the oven and serve with bread of choice. :)
