Hyderabadi Baingan Masala

Ingredient

4 small sized

Brinjal

2 tbspn

Oil

1 tspn

Cumin

1/4 tspn

Turmeric

1/2 tspn

Garam masala

1 pinch

Hing

1 medium

Onion

1/4 tspn

Fennel pwder

Cooking instructions

* Step 1

Grind sesame and peanuts and keep it a side..(U can add dry coconut also in it)

* Step 2

Mark a cross cut on brinjals and keep in Salt water

* Step 3

Then finely chop onion or grate it.

* Step 4

Heat oil in a pan and deep fry brinjals and remove from oil.

* Step 5

Then add cumin seeds in hot oil and hing, add Currey leaves in it. add onion saute it till it gets transparent. Add ginger garlic paste. Add salt, turmeric powder, red chilli powder, coriander powder, garam masala it it. Mix it properly

* Step 6

Add tamarind paste in it.. Stir and add 1 cup or as required water in it when water started boiling add brinjals in it.. Add sesame and peanut powder in it.

* Step 7

Finally add fennel pwder and Jaggery in it. Cook it till brinjal gets soft. Garnish with chopped coriander leaves and serve it.
