Bambaiya Ragda Pattice (street food)

Cooking instructions

* Step 1

For making the ragda, soak the dried white peas and keep them overnight.

* Step 2

Put the soaked peas in a pressure cooker, add approximately 2½ cups of water and pressure cook for 6 whistles or until the peas are soft. It is very important for the peas to be soft. Mash the peas lightly using a masher but be careful not mash them completely as we want to retain some texture of the peas.

* Step 3

Heat the oil in a deep non-stick pan, add the cumin seeds, and asafoetida and saute for 30 seconds,Add the potatoes, mix well and saute on a medium flame for 30 seconds.Add the cooked peas, turmeric powder, chilli powder,ginger-garlic,green chilli paste, garam masala, and salt, dry mango pwder and water if required, mix well and cook on a medium flame for 3 minutes, while stirring occasionally. switch off the flame and keep it a side.

* Step 4

For making patice Combine the boiled, peeled and mashed potatoes, bread crumbs and salt to taste in a deep mixing bowl. Add green chilli paste, red chilli pwder, cumin pwder, cashews, raisins, boiled green peas, chopped coriander leaves mix it and make a dough of it. You can add corn flour if nessesary.

* Step 5

Take one portion of dough and carefully flatten it between the palms of both your hands, making sure it does not break and make a patice of it. Repeat this step and make patice with remaining dough.

* Step 6

Heat oil in tava,Once the oil is hot, place 4 patties on the tava and let them cook on a medium flame for 2 to 3 minutes till golden brown on one side.Turn the patties, drizzle with 1 tsp of oil and let them cook on the other side till golden brown.

* Step 7

For serving the ragda patties, place 2 patties in glasses. Pour 1/4th of the ragda evenly over it.Drizzle 1 tbsp of tamarind chutney, 1 tsp of green chutney and 1 tsp of curd evenly over the ragda. Spricle sev on it, top with finely chopped onion,pomegranate and green coriander leaves. You can sprinkle red chilli pwder, chat masala on it if required.
